Tiffany's Spinach Chocolate Chip Muffins

Equipment

  • Blender

  • 12-hole muffin pan

Ingredients

  • 2½ cups raw spinach

  • ¼ cup oil

  • ½ milk: You can use whole milk, low-fat, or any non dairy milk. Sometimes I like to use pediasure to add protein.

  • 2 free range eggs

  • ½ cup of rolled oats

  • 3 tsp pure vanilla extract

  • 1 ½ cups all purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 325°F/170°C. Line or grease a muffin tray.

  • Put all of the dry ingredients into the blender then add the wet ingredients. Blend until smooth.

  • Fill the muffin cups ¾ full. Sprinkle chocolate chips on the top of the muffins before baking. Bake for 15-20 minutes or until an inserted skewer comes out clean. Allow to cool in the tray for 10 minutes then remove and allow to cool completely on a wire rack.
